An die Brotbäckerinnen
Ich backe mein Brot in einer Kastenform, 55min bei 200 Grad Umluft nicht vorgeheizt. Aber die obere Kruste ist mir immer zu blass. Ist zwar kross und durch aber blass. Wie bekomme ich es brauner ohne dass es trocken wird.
Und wer von euch kennt die Brote, die man ohne gehenlassen direkt backt. Wer macht das und schickt mir sein Rezept?

Kannst du Oberhitze einstellen? Wenn ja, wuerde ich das mal ausprobieren. Ich stelle zudem noch eine grosse Tasse Wasser in den Ofen.
Whole Wheat Bread
sufficient for 2 loaf pans
Ingredients
6 cups whole wheat flour (e.g. nutty wheat or krakley wheat or stone ground whole meal flour)
1 cup white bread flour
1 cup oats
1 sachet dry yeast
2 tsp salt
1 litre lukewarm water
1 Tbsp sunflower or canola oil
1 Tbsp blackstrap molasses
2 Tbsp honey OR 2 Tbsp golden syrup OR 2 Tbsp brown sugar
Method
Mix all dry ingredients in a large bowl.
Dissolve the molasses, honey/syrup/sugar in the lukewarm water and add the oil. Pour into flour mix and stir (with a large wooden spoon) until well combined.
Spoon into loaf pans and leave to rise for about an hour.
Put a mug filled with water in the bottom of the oven and preheat the oven to 180ºC.
Bake the bread for an hour. Turn out onto a rack to cool.
Variations
Seed loaf
Add 1 - 2 cups of mixed seeds (sunflower seeds, pumpkin seeds, linseed, sesame seeds) to the dry ingredients. Sprinkle breads with some seeds.
Nut and Raisin Health loaf
Replace the blackstrap molasses with 2 Tbsp High Test Molasses (this is sweeter). Add 1 cup of raisins / sultanas and 1 cup of chopped nuts (walnuts, pecan nuts) to the dry ingredients.
NOTE: You can buy both blackstrap and high test molasses in the health food section of your supermarket, or at a health shop.

Hej !
Oder dreh das Brot gegen Ende der Backzeit um --- ggf. kannst Du es dann auchaus der Form nehmen.
Ich mache das bei meinem Sauerteigbrot immer so, daß ich nach 1 Std. den Ofen ausschalte undie Brot aus der Form nehme, aber noch im Ofen nachbacken lasse.
Dann bräunt aber keine kruste mehr, das mußt Du schon in der regulären Backzeit machen, sonst wird es in der Tat schnell zu trocken.
